The unusual addition of white koji to Kiuchi's 6-stage mashing process ferments to a refreshing, sparkling sake. The result is a highly amazing combination of sweetness balanced with white koji’s higher acidity. The aroma and taste offer different profiles, keeping the experience extra interesting - playful with banana and wafer on the nose contrasted by a more grounded underripe melon rind on the palette.
Kiuchi Brewery started brewing sake in Naka-shi, Ibaraki prefecture in 1823.
O.E.C Brewing (Ordinem Ecentrici Coctores = Order of the Eccentric Boilers) commenced in early 2014, opening their doors to the public on June 7th, 2014. They have been barrel aging and blending beers as part of the Zymatore project since 2011.
