Tasting Notes
This slightly effervescent sake has a touch of sour taste imparted by the refreshing acidity of white koji. The amazing combination of moderate sweetness and acidity blends well with the natural flavors of the local raspberries.
Kiuchi Awashizuku Sake is infused with strained and pasteurized Connecticut Raspberries in a collaboration between Kiuchi Shuzou Ltd, Japan (the makers of Hitachino Beer) and O.E.C. Brewing, Oxford, CT.
Solidly for fans of sour beer.
Brewery Description
Kiuchi Brewery started brewing sake in Naka-shi, Ibaraki prefecture in 1823.
O.E.C Brewing (Ordinem Ecentrici Coctores = Order of the Eccentric Boilers) commenced in early 2014, opening their doors to the public on June 7th, 2014. They have been barrel aging and blending beers as part of the Zymatore project since 2011.
