The\u003cbr\u003eblends are kept at 48 ̊F until any organic solids that remain settle to the\u003cbr\u003ebottom. The clear juice is then drawn off and fermented into separate lots of\u003cbr\u003ecrémant base wine. A unique blend is created for Ballarin Brut. Liqueur de\u003cbr\u003etirage is added, and the wine is bottled and stored in underground limestone\u003cbr\u003ecellars. These galleries, excavated in the 18th century, maintain a constant\u003cbr\u003etemperature of 55 ̊F naturally. The ideal conditions allow for a long, gentle\u003cbr\u003esecondary fermentation in the bottle lasting six weeks. The finished sparkling\u003cbr\u003ewine rests on its lees for 12 months. The bottles are then riddled over\u003cbr\u003eseveral days and disgorged. Her goal is to create world class\u003cbr\u003etraditional sparkling wines which faithfully convey the unique qualities of\u003cbr\u003eEntre-deux-Mers.
