Winemaker Notes

A subtly spicy, soothingly creamy and leanly salty wine with soft acidity. This wine is a blend of Ugni Blanc, Vermentino and Clairette from a 4-hectare parcel near the village of Ceyreste, from young vines. The hand-picked and hand-selected organic grapes were pressed in whole bunches in the cellar, the fresh must was fermented in cooled tanks, then it was aged for a few months on lees. It was bottled without fining and with only a little filtering, in January 2023.
