Pure and decidedly cool aromas are comprised by notes of smoked green apple, lemon rind and a plethora of floral nuances, and in particular acacia blossom. I very much like the textured of the voluminous, sappy and intensely mineral-driven middle weight flavors that terminate in a clean, very dry and youthfully austere finale. This attractively persistent effort could use better depth, but it will almost certainly develop more if allowed a few years of bottle aging first. Barrel Sample: 91-93

Cailleret offers a depth of flavor and minerality that reminds of its neighbor, Montrachet. Aromas of crushed stones, quince, citrus oil and light baking spices alongside a mineral and precise palate with a silky texture, flavors of white peaches, more citrus and sea salt.
