The harvest began on 4\u003cbr\u003eSeptember and ended on 11 September. We harvested fully ripe grapes, sweet and\u003cbr\u003efragrant. The quantity was rather low, but the quality is exceptional. The wines will have a\u003cbr\u003econcentrated and aromatic profile, offering excellent ageing potential.\u003c\/p\u003e\n\u003cp\u003eWe chose to harvest the grapes at night in order to\u003cbr\u003ehelp the concentration of the aromas, the flavors and to control the oxidation of\u003cbr\u003ethe fruits.\u003cbr\u003eIn order to optimize the quality of the crop, we keep our vines under constant\u003cbr\u003eobservation : we limit our yields, start the harvest according to the maturity of each\u003cbr\u003eplot, hand-sort the grapes...\u003cbr\u003eGrapes are slowly pressed to release of their aromas. Then, the juice undergoes\u003cbr\u003ealcoholic fermentation at a controlled temperature between 16°C to 21°C during 4\u003cbr\u003eweeks.
