The 2017 Chorey-lès-Beaune Village is the usual blend of three sectors of the appellation that Nathalie Tollot blended in the proportion of what will represent the final blend, since each is raised separately. It sees no new oak. The perfumed cranberry and wild strawberry bouquet is nicely defined, and the pretty palate shows quite sharp acidity that lends freshness and edginess. I like the fruit profile here - very pure and full of life with a vigorous, refreshing finish that leaves a spicy residue. Very fine. Barrel Sample: 89-91
A good Chorey-lès-Beaune should display aromas and flavors typical of red wines from Beaune with red fruits and flowers coupled with freshness and minerals. Tollot-Beaut is bright and perfumed with red cherries and slightly coarse tannins. This is a classic rustic red wine.
Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.
