Tasting Notes

The umami is extremely pronounced on the nose with tasting notes of olive oil, sea salt and toasted sesame

     - made of 99% koji rice, a notably high concentration

     - made with Yamahai process to ensure higher acidity

     - not diluted

     - aged in a tank for 10+ years

Try paired with a caramelized onions, figs with goat cheese or seared foie gras.

Brewery Description

The Kaetsu Brewery was founded in 1880. With cold winters and plenty of clean water and fresh air, the Niigata environment perfectly suits the requirements of rice growing and sake production. 

The newer line of sake is titled KANBARA. Kanbara is the name of a nearby district that traces its origins back very far in local history.  Kanbara sake is now available in most major locations in the United States.
