Nurtured in the temperate climate of Yoshino area, Yoshino cedar has been traditionally considered as the best wood for making sake casks because of the consistency of its grain and the excellent aroma it gives. A nod to the Edo Period of Japan, when sake first started being produced on an industrial level, and was stored and transported in large wooden barrels by ship.
