Diverse layered aromatics of dark cherry, blackberries, and crème Brule that leads into a touch of cedar, sweet cigar, and earthiness on the nose. With dense flavors of black cherry, black currant, and cocoa that linger on the complex palate, this wine has lush dusty tannins that are balanced by a nice touch of oak and spice on the finish. This is a very opulent and layered Cabernet Sauvignon that you would expect from this world-class vineyard site.
100% Cabernet Sauvignon
100% Champoux Cabernet Sauvignon, Horse Heaven Hills
We have been fortunate to work with Champoux Vineyard fruit since 1992 and we believe it is the most intense and one of the most expressive vineyard sites in WA State. With the Cabernet harvested the 12th of October, the fruit came in with near perfect acidity and fruit flavors. We used the pump-under fermentation method with 796 yeast on the Cabernet Sauvignon. 100% malolactic fermentation was completed in 59-gallon French Oak barrels. The wine was then aged for 30 months in 65% new French Oak Barrels with the
other 35% in 2nd and 3rd use French Oak Barrels.
