Sauvignon Blanc is often described using the word “gooseberry,” better known as groseille à maquereauin French, thanks to traditional Norman fishermen’s recipes that include these berries to season mackerel dishes. Indeed, the snappy taste of Salvard’s Cheverny brings to mind my grandmother’s delicious “Bouonia”: mackerel cooked simply in a pot of white wine, vegetables, lemon, and gooseberry. Fresh and zesty!
