This wine offers fruity and floral aromas with a fresh minerality. It pairs well with seafood and is also great as an aperitif. We want to enhance the freshness and elegance of a typical Chardonnay from Burgundy. A floral and fruity wine (citrus, peach) combines with mineral notes and a beautiful length. A good pairing wine for plenty of dishes.
The grapes are harvested by hand and sorted when picking the grapes. They are then lightly pressed in a pneumatic press at a low pressure to get a slow extraction. After a gentle racking of the must, the wine is put in French oak casks of 500 liters (no new oak) for both alcoholic and malolactic fermentations, with wild yeasts, ageing for 10 months. During this time, we did no stirring of the lees in the barrels. A month before the bottling, the wine from the different barrels is put in a stainless steel tank to make the blend. The wine is finally fined and lightly filtered before bottling according to the lunar calendar (“fruit” day).
