Vinous
The 2023 Sancerre is done in an appetizing, tender style with delicate restraint and balance. It is not massively aromatic but has an ease of elderflower and citrus. It feels like it's more hands-off than ever before. There is less intervention, low sulfites and stirred lees to protect the wines from oxygen and avoid using sulfites, which gives the wine a sense of creaminess, too.
Tasting Notes
Pale yellow. Very aromatic with white flowers and citrus fruits with exotic notes. Smooth, fruity and elegant with a supple palate.
Pairs well with sea food, grilled fish, smoked smalon, goat cheese (with the local crottin de Chavignol).
About the Wine
This Sauvignon comes mostly from vineyards in seven villages, with the three famous Sancerre Terroirs : Chalk, flint, Caillotes. Sauvignon grapes are harvested partly by machine and partly by hand. The pressing is only in pneumatic presses. Vinification takes place in stainless steel tanks with controlled temperature in order to keep all the fine aromas of Sauvignon. A perfect expression of an ideal Sancerre.
