Tasting Notes

A classic Cote de Lechet, about as mineral as Chablis can be. This premier cru Cote de Lechet is a model of Left Bank precision, razor sharp, with juicy, mouth-watering acidity. A characteristic floral attack and gun-flint smokiness fill the mid-palate, and the finish is bright berry fruit and long, long minerality.

Winemaker Notes

This domaine, which sits in the village of Milly just a few minutes from downtown Chablis, was founded in 1955 and is now in the hands of 3rd generation winemaker Fabien Dauvissat. The wines were of mediocre quality and were sold in bulk when Fabien took over in 2009 and immediately began the conversion to organic and biodynamic farming. The Cote de Lechet sits on a rather dramatic 38 degree slope of gravel and kimmeridgian marl, exposing the vines to intense sunlight while also draining away excess water and imbuing powerful minerality. Fermentation and elevage occur in stainless steel and on the lees, rounding out the final wine while preserving acid.
