A rose-gold hue with glinting flecks of soft green, naturally enhanced by a fine, abundant and dynamic effervescence. Deliciously fruity intensity with elegant notes of nuts and stone fruits (greengage and crunchy cherries). Prolonged and nuanced development of exquisite notes of baked goods (crepe dough and puffed cereals). A superlative aroma, with a refreshing and sophisticated purity. A charming mouthfeel with notes of fresh pineapple and sudachi zest, amplified by a creamy and delicate texture. A persistent finish with a chiseled structure. A noble and distinctive vintage with excellent depth.
Enjoy with bream ceviche and kalamansi condiment or a high-end Pata Negra ham aged 36/48 months. Serve at, 11/12°C.
Winemaker Notes
One of my first memories with Billecart-Salmon was marked by a lovely tasting of Brut Rosé with Breton restaurateur friends, a lovely moment of sharing and friendship! The Vintage 2016 vintage reveals a citrus nose full of freshness, finesse and refinement with a personality as complex as it is pleasant. To accompany this wine, I imagine, on the sea side, a meunière-style turbot with citrus white butter. On the earth side, I will serve a beautiful poultry just roasted in the oven with candied lemon juice and fresh herbs. The ideal place to savor this 2016 vintage would be first of all accompanied by family and friends in my dear native Brittany or at a table in my restaurant L'Ours.
