Winemaker Notes

The NV Tradicion Pedro Ximenez 20 anos VOC, produced from Pedro Ximenez grapes, has matured for an average of 23-25 years in a solera (originally purchased from Domecq & Harveys) and is bottled relatively 'young' to maintain the character of the grapes. The alcohol is also kept at the permitted minimum of 15%. The taste is equally balanced and elegant. Clear intense fruit aromas in the nose; raisins, figs and plums, a little licorice and a little brioche. On the palate, the 20-year-old PX is silky smooth and even slightly creamy. It has a long finish of chocolate, liquorice, coffee and toffee. This beautiful PX has about 420 grams of sugar and has a perfect balance between the fruit and the sweet, which makes it a great after-dinner drink and combines wonderfully with culinary chocolates, soufflé or with blue cheeses such as Roquefort, Gorgonzola or Treviso and is a good ally with a Cuban cigar.
