Winemaker Notes
The white wine Con Vento Toscana Bianco IGT from the Castello del Terriccio winery represents one of the best productions of this winery. The name of the wine comes from the vineyards located on a hill exposed to all winds; the vineyards are located at an average altitude of about 100 meters and enjoy excellent exposure to the sun. To obtain this wine, Viognier and Sauvignon Blanc grapes are used. The production disciplinary of the Con Vento Toscana Bianco IGT wine provides for a careful harvest with manual selection of the bunches. We then proceed to cryomaceration for about 12 hours and to a subsequent soft pressing. The fermentation takes place in steel tanks at a controlled temperature, while the aging takes place in steel for about 6 months. In this way a finely structured, elegant and refined wine is obtained, which is excellent to drink.
Winery Notes
“Con Vento” by Castello del Terriccio was born in Tuscany in the Catellina Marittima area, historically dedicated to wine production: already between 800 and 500 BC the Etruscans were the first to own rudimentary vineyards in these lands. The Doglia Castle, called “del Terriccio” dates back to the Middle Ages and was a stronghold that protected the inhabitants from enemy attacks. In the 1900s the estate was purchased by the Serafini Ferri family who reorganized both the land and the structure, making it an important hub for the export of corn to Europe. In 1975 Gian Annibale Rossi purchased the estate and made it a fundamental point of reference for the production of excellent quality wines .
The “Con Vento” vineyards of Castello del Terriccio are located on approximately 65 hectares of the 1500 total on the estate, used for various crops including olive trees. An exceptional synergy between soil, climate and labor has allowed us to be constant in production, enhancing above all the biodiversity around the vineyards to guarantee the grapes release the best potential: solar exposure is excellent for complete maturation of the bunches and the presence of iron and copper in the soil guarantees excellent structure to the final product. The harvest of the grapes is manual with a careful selection in the vineyard and a cryomaceration takes place in the cellar for approximately 24 hours, subsequently accompanied by alcoholic and malolactic fermentation in steel. Refines for 6 months on fine lees.
