Complex flavors of spice, honey, and toasted rice highlight this tart, savory sake. There is a bright and lively flavor profile while still having a balance of umami and acidity to complement it.
This sake uses an ancient strain of Akamai (red rice) to make this unique sake.
Brewery Description
Located in a Wakayama valley lies what was once orignally built as a temple, but now stands as Heiwa Shuzou - renamed after the end of the Second Wolrd War (Heiwa 平和 translates to "peace" or "harmony"). While the brewery has been making sake for four generations, the KID brand itself is quite young, only having started production about 10+ years ago.
