The 2020 Savigny-lès-Beaune Les Lavières 1er Cru is well-defined on the nose with slightly earthy red berry fruit, touches of crushed stone, slightly peppery (though this is de-stemmed like all Tollot-Beaut’s cuvées.) The palate is medium-bodied with sappy red fruit. Good density here, maybe not the most tensile of the cuvées from the Domaine this vintage, but there is decent weight on the back end. Give it a couple of years in bottle.


A moderately fresh nose reflects notably ripe but not roasted notes of red and black currant, spice and dried floral nuances. The rich, concentrated and succulent medium-bodied flavors coat the palate while the sap buffers the dense but fine tannins shaping the mildly warm finale. This is perfectly good, if a bit atypical, but it does not appear to be at its usual distinguished level.

Winemaker Notes

Savigny-lès-Beaune Les Lavières is soft, supple, and delicately scented with strawberry aromas and flavors and an underpinning of minerality. Aging in 30% new Burgundian pièce brings subtle notes of vanilla and spice. Les Lavières can mature early and offers excellent near-term drinking.


Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.
