Winemaker's Notes
Our Jack London Cabernet Sauvignon thrives in the warm morning sun and cooling afternoon breeze, in combination with the vineyard’s red volcanic soil. The 2021 vintage featured a continuation of dry conditions leading to increased levels of concentrated fruit in an earlier than usual harvest with outstanding wines from Sonoma Mountain. The fruit was hand harvested in the cool mornings of September 21-29th, 2021. Elegant flavors and a subtle tannin structure developed over the 18 days of skins in tank before the wine was drained and pressed off to tank and then racked to barrels. The finished wine was then aged in a combination of French, American and Hungarian barrels of which 30% was new for 26 months.
The influence of the vineyard’s red volcanic soil and the fruity characteristics of the grapes combine to produce an outstanding, very distinctive Cabernet Sauvignon.
Blend: 85% Cabernet Sauvignon, 5% Merlot, 5% Syrah, 5% Zinfandel
