Raise your hand if you knew that the Chablis region is one of the oldest in Burgundy. With a wine-making history that dates back to the Middle Ages! In fact, in the 12th century, the Cistercian monks were the first to recognise the potential of these lands and to cultivate Chardonnay, the grape variety that still reigns supreme today. Centuries later, Chablis Premier Cru Fourchaume from the Domaine Yvon & Laurent Vocoret represents that territory and style to perfection. Produced with 100% Chardonnay grapes from vineyards located on soils rich in stones and limestone, on Kimmeridgian marl, this wine is distinguished by its depth, structure and fullness in the mouth. The Kimmeridgian marls are a type of sedimentary rock, formed millions of years ago on the bottom of an ancient sea, rich in fossils of oysters and other marine organisms. These elements contribute to giving the wine its characteristic minerality and flavour, which make it so recognisable and appreciated. The grapes are harvested by hand and vinified in stainless steel tanks to preserve their purity and aromatic intensity. Ageing takes place partly in steel and partly in oak barrels to give the wine complexity and structure. Fourchaume has a brilliant straw yellow colour with greenish reflections. The bouquet releases intense and complex aromas of white flowers, citrus fruits, white-fleshed fruits and mineral notes. In the mouth it is full-bodied and well-structured, with good acidity and a remarkably long-lasting aroma. Designed to be appreciated from a young age, this Chablis is capable of evolving well in the bottle for 8 years or more, developing tertiary aromas and greater complexity. A versatile wine, it goes perfectly with dishes based on fish, crustaceans and molluscs, but also with white meats and fresh cheeses.
In Maligny, in the Chablis area, on the northern border of Burgundy, is the Domaine Yvon & Laurent Vocoret, a winery with deep roots that date back to 1713. A story of family, passion and respect for the land, handed down from generation to generation, up to the present day, with Huguette, Christine, Clémentine, Yvonne and Laurent, custodians of a precious heritage. Today the company has about 26 hectares of vineyards that guarantee an annual production of almost 200,000 bottles. In the countryside, only Chardonnay, the main grape variety in this area, with vines that are on average over 45 years old. A heritage of great value that allows for the production of superior quality grapes. The Vocoret family runs their business with a ‘reasoned struggle’ approach, a cultivation method that favours sustainability and respect for the environment, limiting the use of chemicals to a minimum.
