Gosset's 2007 Celebris Rosé Extra-Brut is a blended rosé made from 59% Chardonnay (from Avize, Chouilly, Cramant and Vertus) and 41% Pinot Noir (Aÿ, Bouzy and Ambonnay) of which 7% is red wine. This precise and focused wine displays an apricot color and opens with a super precise and chalky bouquet of oyster shells and iodine intertwined with fine red berry and rose petal notes. Pure and salty on the palate, this is sharp and precise as a knife but also highly finessed, textured and fruity, with a very discreet creaminess and chalky grip on the refreshing finish. This is not just an exciting rosé full of finesse and elegance but also a great 2007 that can compete with the very best.

There’s an old-fashioned formality to this wine’s structure—it did not go through malolactic fermentation, so there’s tartness to the fruit as a counterpoint to the heady richness. It gets its color from seven percent still pinot noir in the blend, which also points up a faint rose-petal note and some vegetal tones. Serve it with buttery pasta with morels, or a crisp roast duck.

The Celebris Rosé 2007 Extra Brut cuvée is made to please the finest gourmet and also anyone who loves romanticism in an aperitif. This year was ideal for a beautiful rendition of a rosé. The great chardonnay of the Côte des Blancs gives this exceptional freshness.
The color is pale pink with ruby-cherry reflections. Flavors of raspberry, strawberry, blueberry and vanilla but also fresher notes of flowers such as lilac or violet. Fresh and broad, dominated by red fruits such as strawberry, raspberry and redcurrant, giving a soft full sensation finishing on notes of grapefruit and lemon.
This champagne can be served as an accompaniment to carefully chosen dishes such as salmon, a strawberry and tomato gazpacho with basil, or pan-fried scampi. It can also be served with carefully chosen dishes such a tuna fish, roasted Dublin-Bay prawns, veal, suckling or salt-marsh lamb, wild salmon but also with desserts based on strawberry, raspberry or pink grapefruit.
