About the Wine

Fumé Blanc is traditionally made with Sauvignon Blanc, often with a touch of Semillon,
and aged in French oak barrels. It departs from the typical grassy and floral style.
Instead, it carries subtle tones while adding depth and dimension, seamlessly blending
tradition with the innovative agricultural methods we employ to create an unforgettable
and intense experience for your palate.

For our Napa Valley Fumé Blanc, the winemaking process begins with careful
vineyard selection and picking. We assess ripeness by checking sugar levels, acidity,
and phenolic maturity. We wait for signs of autumn with mature seeds and golden
clusters, ensuring no green flavors in the wine. After a gentle whole-cluster pressing,
we barrel-ferment the juice in French oak barrels. This extended fermentation lends
richness, and we complete 100% malolactic fermentation on the lees for added
creaminess. We create the final blend, showcasing perfect acidity, abundant
fruit flavors, and a mouth-watering finish.
