This Champagne has the necessary bottle age for its bone-dry character to be softened and given great complexity. The wine’s freshness and apple fruits are palpable but they have attractive nutty hints that make this fine bottling ready to drink.

The current NV Ultra Brut is a 52% Chardonnay and 48% Pinot Noir blend that is based on the 2007 vintage; it includes – as always – a reserve of the former Ultra Brut vintage, in this case 2004. In fact, the Ultra Brut is produced only every three years on average and the 2007 base is only the twelfth cuvée since the (1976), which was released in 1989. It is citrus-colored and has some very nice white-golden reflections. Bright and fresh on the intensely-flavored brioche nose, this vibrant, round and mouth-filling Champagne reveals a persistent mineral complexity and structure, along with very elegant and refreshing citrus fruit.

Quite fresh and floral nose, with dried flowers, lime blossom and gentle biscuity nuances. The palate has a sheer, dry and crisp feel. Tart lemon juice finish.

This shows ripe fruit and pastry notes on the nose, while the palate is firm and focused, with a lively bead and a subtle mesh of fresh-cut apple, pickled ginger and almond biscotti flavors. Smoke-tinged finish.

Winemaker Notes

This truly unique Champagne is made without the addition of any sugar (dosage). In the 19th Century, Laurent-Perrier was well known for our "Grand Vin sans Sucre" and is now one of the last Champagne houses to still produce a Champagne of this type. The grapes selected for this wine have a natural acid/sugar balance, so even when fermented to complete dryness no dosage is required. The wine ages on its lees for at least four years and upon disgorging is topped off with wine from the same cuvee. No sugar whatsoever is added to Laurent-Perrier Ultra-Brut at any time.

Lipid, bright yellow with a fine bead.  Intense and forward, with citrus and honeysuckle notes and a unique mineral component, oftentimes likened to a fresh sea breeze. Surprising depth and power with a purity and concentration of flavor all its own. Amazingly well balanced and absolutely bone dry.


An incredibly versatile Champagne, L-P Ultra-Brut matches well with everything from fresh goat cheese to sushi. The classic and unparalleled food pairing is with oysters.
