So much ripe sour-cherry aroma with a touch of licorice pull you into this well-structured pinot noir. The moderately dry tannins are welded to plenty of depth and lively acidity. Very good length, with quite some chalkiness at the long finish. Drink or hold.
Tasting Notes
Delicate aromas red and black berries underlined by subtle smoky and forest floor. Beautifully structured mouthfeel, combines fruitiness – Morello cherries and kirsch – with supple, velvety tannins and juicy freshness.
Delicious as an aperitif with ham, charcuterie, or bruschetta. For main course pair with roast poultry, vegetable tempura, plancha, Japanese barbecue with vegetables or meat, and smokey fish. Can age 6-8 years.
Winemaker Notes
Pinot-Noir, the only red grape variety authorized in Alsace, is pruned with the
simple Guyot method to limit yields and obtain superb aromatic concentration.
Grapes are selected at maturity and after de-stemming, they undergo a gentle pneumatic pressing followed by an eight-day cold maceration to extract color and fruit. The juices are blended in the cellar in stainless steel vats and old casks for the malolactic fermentation. The Pinot Noirs are the only Trimbach wines which undergo malolactic fermentation (in tank); No long ageing on lees. They are bottled after three months ageing in stainless steel tanks.
